Curried mango soup

Ingredients (6)

410.00 g mango — fresh, peeled, stoned or canned, drained
600.00 ml milk
lemon — zest and juice
5.00 ml curry powder
salt and freshly ground black pepper — to taste
cream — to serve

Method:

Place the mangos in a food processor and purée till smooth. Pour the purée into a saucepan, add the milk, lemon juice and rind and the curry powder. Bring the mixture to the boil and simmer for 1 minute. Season with salt and pepper if necessary.
Pour a little cream over just before serving.
Serves 4.
