Curried lentil, bean and pear salad

    brown lentils

    bay leaf

    oil
  • 1
    onion, halved and sliced
  • 50
    ml
    raisins
  • 5
    ml
    curry powder
  • 10
    ml
    brown sugar
  • 410
    g
    pear halves, drained and chopped
  • 420
    g
    baked beans in tomato sauce
 

Method

 
1. Boil the lentils with the bay leaf until the lentils are soft. Rinse, drain and set aside. 2. Heat the oil and sauté onions and raisins until the onion is soft. Add curry powder and sauté for 1 minute before adding the sugar. Add to the lentils and mix well. Add the pears and the beans. Mix gently. Can be served on pear halves. Serves 4-6
