Curried lentil and pecan nut patties

    g
    red lentils, well rinsed and soaked overnight in water to cover
  • 50
    g
    pecan nuts, chopped
  • 1
    large onion, roughly chopped
  • 1
    jumbo egg
  • 30
    ml
    good quality curry powder
  • 2
    ml
    brown sugar
  • 3
    cloves of garlic
  • 30
    ml
    olive oil
  • 250
    ml
    dried breadcrumbs
  • oil for frying
 

Method

 
Drain lentils and just cover with hot water.
Cook in a microwave on full power for 25 minutes.
The water will be been absorbed and the resultant 'porridge' will be yellowish and crumbly. (Alternatively, it can be cooked in a pot until the desired texture is reached).
Add the chopped pecan nuts.
Blend remaining ingredients (except the breadcrumbs) in blender until smooth and stir into lentil/nut mixture and mix well.
Shape into patties, roll in breadcrumbs and fry in oil until brown and crispy.
Makes 12 patties.
