Curried lamb à la Jock Lodge

    vegetble oil

    lamb, cubed
  • 1
    onion, chopped
  • 30
    ml
    mild curry
  • 15
    ml
    ginger, crushed
  • 2
    cloves garlic, crushed
  • 1
    carrot, chopped
  • 1
    turnip, chopped
  • 500
    g
    button mushrooms
  • 125
    ml
    stock
 

Method

 
Heat oil in pan, add the lamb cubes in batches and cook until well browned. Remove from pan.
Drain all but 15 ml of the juices from the pan.
Add onion, curry powder, ginger, garlic, carrot and turnip to pan.
Cook, stirring, until vegetables are soft. Return meat to pan.
Add mushrooms and stock and simmer, covered, for about 15 minutes or until lamb is cooked. Serve with rice.
