Curried fish starter

    seedless raisins
  • 60
    ml
    sherry
  • 50
    ml
    hot water
  • 15
    ml
    oil
  • 1
    onion, sliced
  • 10
    ml
    curry powder
  • 5
    ml
    turmeric
  • 7
    ml
    mustard powder
  • 5
    ml
    Worcestershire sauce
  • 250
    ml
    mayonnaise
  • 500
    g
    hake, cooked and flaked
  • 125
    ml
    cream, stiffly whipped
 

Method

 
Soak the raisins for at least one hour in the sherry and hot water. Heat the oil in a pan and sauté the onion until soft. Add the curry powder, turmeric and mustard powder and fry for about a minute. Add the Worcestershire sauce and raisins, including the liquid and mix well. Cool and add the mayonnaise and fish. Mix. Finally fold in the cream and serve on whole lettuce leaves. Garnish with radishes. Chill until needed.
