Ingredients (12)

120.00 g raisins — seedless
60.00 ml sherry
50.00 ml water — hot
15.00 ml oil
1.00 onion — sliced
10.00 ml curry powder
5.00 ml turmeric
7.00 ml mustard — powder
5.00 ml Worcestershire sauce
250.00 ml mayonnaise
500.00 g hake — cooked, flaked
125.00 ml cream — fresh, whipped to stiff peaks

Method:

Soak the raisins for at least one hour in the sherry and hot water.
Heat the oil in a pan and sauté the onion until soft.
Add the curry powder, turmeric and mustard powder and fry for about a minute.
Add the Worcestershire sauce and raisins, including the liquid and mix well. Cool and add the mayonnaise and fish. Mix.
Finally fold in the cream and serve on whole lettuce leaves.
Garnish with radishes.
Chill until needed.
