Curried fish cakes with apricot sauce

Ingredients

  • 500
    g
    filleted hake
  • 625
    ml
    milk
  • 2
    ml
    salt
  • 1
    bay leaf
  • 1
    onion, finely chopped
  • 5
    ml
    garlic, freshly crushed
  • 15
    ml
    butter
  • 5
    ml
    mild curry powder
  • 250
    g
    mashed potatoes
  • 1
    large egg, beaten
  • Flour for dusting
  • Oil for frying
  • Sauce:
  • 30
    ml
    butter
  • 45
    ml
    smooth apricot jam
  • 15
    ml
    lemon juice
 

Method

15 minutes
 
Place fish in a saucepan, add milk, salt and bay leaf, and simmer for 10 minutes.
Remove fish and allow to cool, then flake.
Sauté onion and garlic in butter and add the curry powder.
Combine flaked fish and potato with onion mixture.
Fold in beaten egg.
Form mixture into cakes and dust lightly with flour.
Sauté until golden brown on both sides.
To make the sauce, heat butter in a small saucepan, stir in jam and add lemon juice.
Spoon over fish cakes and serve immediately.
