Curried dried bean casserole

    onion, peeled and sliced

    oil

    Granny Smith apple, peeled and cubed
  • 3
    tomatoes, skinned and chopped
  • 75
    ml
    fruit chutney
  • 20
    ml
    medium curry powder
  • 125
    ml
    seedless raisins
  • 25
    ml
    vinegar
  • 500
    ml
    water
  • salt and pepper
  • 540
    g
    cooked dried beans
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Sauté the onion in the oil until soft. Add the remaining ingredients, but not the cooked beans. Season to taste with salt and pepper, reduce the heat and simmer until a fairly thick sauce has formed. Spoon layers of dried beans and sauce into a casserole dish, cover and bake for about 30 minutes until the dish is heated through.
