Curried cucumbers

    kg
    English cucumbers
  • 500
    g
    onions, skinned
  • 250
    ml
    water
  • 5
    ml
    salt
  • 250
    ml
    sugar
  • 500
    ml
    white grape vinegar
  • 30
    ml
    curry powder
  • 10
    ml
    mustard powder
  • 30
    ml
    cornflour, prepared with a little cold water
 

Method

 
Slice the cucumbers and onions thinly and halve. Bring the water to the boil and cook the cucumbers and onions for 10 minutes. Add the salt and sugar and heat until the sugar has dissolved. Add the remaining ingredients and boil until the mixture thickens. Spoon the hot mixture into clean, sterilised jars. Makes 1,75 litres.
