Curried chicken kebabs

    canola or sunflower oil
  • 1
    medium onion, chopped
  • 2
    garlic cloves, finely chopped
  • 5
    cm
    piece of ginger, finely chopped
  • 1
    tsp
    turmeric
  • 3
    Tbs
    curry powder
  • 250
    ml
    yoghurt
  • 800
    g
    chicken breasts, cut into chunks
  • 2
    Tbs
    apricot jam
  • sea salt and black pepper
  • fresh coriander
  • TO SERVE:
  • basmati rice, poppadoms and cucumber sambal
 

Method

00:15 + Standing time
 
Heat oil in a small frying pan and sauté onion until soft. Add garlic and ginger, sauté for a minute, then add turmeric and curry powder and cook for another minute.

In a bowl, combine mixture with yoghurt and jam. Add chicken, toss to coat and allow to stand for 20 minutes.

Thread chicken onto kebab sticks and grill until cooked through. Serve with basmati rice, poppadoms and a cucumber sambal. Top with coriander.
