Curried chicken and pawpaw salad

Ingredients (10)

4 chicken breast fillets
1 papaya — large, sliced
200 g baby spinach
4 spring onions — sliced
100 g nuts of your choice — cashew or Brazil
1/2 cup yoghurt — natural
MARINADE:
1 curry powder
limes — zest and juice
1 honey
sea salt and freshly ground black pepper

Method:

Preheat oven to 180°C.

Combine the marinade ingredients and marinate the chicken for half an hour.

Transfer the chicken to a roasting tray and bake for 10 minutes or until cooked through. Slice and set aside.

Cook the remaining marinade in a small pan for 1 minute. Allow to cool slightly, then combine with yoghurt and olive oil.

Arrange the spinach leaves, pawpaw slices and chicken on a platter. Top with the spring onions and nuts and drizzle over the warm dressing.
