Curried chicken

    whole chicken
  • salt
  • 1
    onion, sliced into rings

    oil
  • CURRY MIXTURE
  • 15
    ml
    medium curry powder
  • 5
    ml
    turmeric
  • 15
    ml
    fruit chutney
  • 15
    ml
    oil
  • 10
    ml
    sugar
  • 5
    ml
    vinegar
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Clean the chicken thoroughly and cut it open along the breastbone. Rub well with salt on the inside and outside. Place the chicken in an oven bag, open it up and splay it to make it flat. Sauté the onion rings in the oil until transparent and place in the chicken's cavity. Mix all the ingredients for the curry mixture and pour it into the oven bag. Shake the bag well to cover the chicken with the curry mixture. Place in a fairly flat dish and bake for 1 to 1 1/2 hours or until the chicken is done. There should still be some liquid in the oven bag. Turn the chicken during the last quarter of an hour before it's done. Serve with mixed vegetables, curried vegetables, curried potatoes and chutney.
