Ingredients (10)

7.00 onion — medium, sliced
2.00 kg cabbage — shredded
SAUCE
300.00 g white sugar
625.00 ml vinegar — grape
20.00 ml curry powder — medium
15.00 ml mustard — powder
10.00 ml salt
5.00 ml ginger — ground
65.00 ml cornflour
150.00 g sultanas

Method:

Place onions in a large stainless steel saucepan and cover with water. Boil until soft. Add cabbage and more water and just bring to the boil. Drain and return the cabbage mixture to the saucepan. Boil all the ingredients for the sauce together for five minutes. Stir occasionally. Pour over the cabbage mixture and boil for about five minutes. Spoon into sterilised jars.
Makes 1,75 litres curried cabbage.
