Currant triangles

Ingredients

    ml
    golden syrup
  • 450
    g
    margarine
  • 3
    extra-large eggs, whisked
  • 4
    x 250 ml cake flour
  • 2
    ml
    salt
  • 15
    ml
    bicarbonate of soda
  • 750
    ml
    sugar
  • 4
    x 250 ml oats
  • 250
    ml
    currants
 

Method

15 minutes
 
Preheat the oven to 180 °C.
Grease a 27 x 36 cm oven pan.
Heat the golden syrup and margarine together until melted. Cool.
Add the eggs and mix.
Sift together the dry ingredients.
Mix in the sugar, oats and currants and press the mixture into the prepared oven pan.
Bake for 12 to 15 minutes or until golden brown and done.
Cut into triangles and leave to cool in the pan before transferring to a wire rack to cool completely.
Store in an airtight container.
