Cumberland sauce

Ingredients

    lemon
  • 1
    orange
  • 50
    ml
    red wine vinegar
  • 1
    onion, finely chopped
  • 6
    black peppercorns
  • 100
    ml
    port, red wine or chicken stock
  • 150
    ml
    redcurrant jelly
 

Method

20-30 minutes
 
1. Zest the rind of the lemon and orange and squeeze the juice from the fruit. 2. Place the vinegar, onion and peppercorns in a saucepan and boil until reduced by half. Add the lemon and orange juice and the other ingredients, except for the citrus rind. Simmer for 10 minutes. 3. Strain and add the zest. Simmer for 5 minutes. Cool.
