Cucumber sandwiches with mustard butter

Ingredients (8)

100.00 g butter
wholegrain mustard
salt and freshly ground black pepper — to taste
5.00 ml lemon juice
5.00 ml fresh parsley — chopped
8.00 bread — thin sliced white
1.00 cucumber — English, thinly sliced
watercress — to garnish

Method:

Blend butter with mustard, seasoning, lemon juice and parsley. Spread over bread and trim off crusts.
Cover bread slices with paper-thin cucumber slices (use a mandolin slicer). Sandwich two bread slices together and cut into neat triangles
Serve on a bed of watercress and garnish with nasturtiums.
Makes 16 triangles.
