Cucumber salad with sour cream

    cake flour

    castor sugar

    mustard powder

    ml
    white grape vinegar
  • 2
    egg yolks
  • 50
    ml
    olive oil
  • 3
    spring onions, chopped
  • 125
    ml
    sour cream
  • 1
    large English cucumber
 

Method

 
Combine the cake flour, salt, sugar and mustard powder. Add 15 ml (1 T) water and mix well. Heat slowly and gradually add the vinegar and another 25 ml (5 t) water. Simmer until the mixture thickens, stirring continuously. Remove from the stove and stir in the egg yolks one by one. Add small quantities of oil at a time while stirring continuously. Chill until needed. Add the spring onions and sour cream and mix. Slice the cucumber and quarter each slice. Pour over the sauce and serve.
