Cucumber salad

  • 3
    English cucumbers, thinly sliced
  • 3
    large onions, peeled and thinly sliced
  • 45
    ml
    coarse salt
  • 1
    quantity basic sweet-'n-sour sauce
 

Method

 
Arrange the cucumber and onions in layers in a colander over a dish. Sprinkle each layer with salt. Place a saucer with a heavy object on top and leave for 3 hours to drain. Prepare the sweet 'n sour sauce as described, add the vegetables and bring to the boil. Boil for 1 minute more. Spoon into sterilised jars while still hot and seal immediately. Makes about 3,2 litres salad.
