Cucumber mint soup

Ingredients

    cloves garlic
  • 15
    ml
    olive oil
  • 45
    ml
    mango chutney
  • 30
    ml
    chopped fresh parsley
  • 30
    ml
    Pernod
  • 30
    g
    fresh mint, chopped
  • 3
    cucumbers peeled, seeded and chopped
  • salt and pepper
  • 200
    ml
    sour cream
  • milk
  • sprigs of mint, to garnish
 

Method

 
1. Place all the ingredients, except the sour cream and milk, in a liquidiser and blend until smooth. 2. At the last minute, add the sour cream. Add milk to make the mixture more liquid if necessary. Chill. 3. Serve garnished with a sprig of mint.
