Cucumber and basil coucous

Ingredients

  • 250
    g
    couscous
  • 1
    tsp
    butter
  • 4
    inches
    cucumber, diced
  • handful basil, chopped finely (optional)
  • Dressing:
  • 2
    Tablespoons
    extra virgin olive oil
  • 1
    crushed garlic clove
  • 1
    lemon's juice
  • salt to taste
 

Method

Put couscous in a bowl and add boiling water until the couscous is covered. Leave for 5 mins, add a bit of butter and stir with a fork. Let cool. Add cucumber, garlic and basil. Mix in the olive oil, lemon juice and salt. Pour over couscous and serve.
