Crusty spareribs with ginger

    pork spareribs
  • MARINADE
  • 125
    ml
    soy sauce
  • 60
    ml
    peach chutney
  • 30
    ml
    medium-cream sherry
  • 4
    fat cloves garlic, crushed
  • 10
    ml
    grated fresh, or ready-prepared ginger
 

Method

 
Wipe spareribs with a vinegar-soaked cloth and remove any excess fat. Place either the whole rack or individual ribs in a roasting pan. MARINADE: Mix all ingredients together, pour over spareribs and leave to marinate for 30 minutes. Turn ribs and marinate for another 30 minutes. Drain, reserving marinade. Brush spareribs with a little marinade and bake at 180 ºC for 20 minutes on each side, or until tender. Remove from oven, then grill for 10 minutes or until crisp, turning ribs frequently and basting with marinade. Serve immediately with potatoes rolled in salt, rosemary and milled pepper and then baked. TOTAL KILOJOULE COUNT: 10 145 kJ (2 425 Cal). A portion: 2 535 kJ (605 Cal).
