Ingredients (12)

60.00 ml sunflower oil
2.00 onions — peeled and finely chopped
250.00 g mushrooms — thinly sliced
250.00 g chicken — cooked, sliced
250.00 g broccoli — cut into florets
sea salt and freshly ground black pepper
1.00 bread — French loaf
250.00 ml mature cheddar cheese — grated
6.00 eggs — extra-large
500.00 ml milk — full cream
2.00 tomatoes — peeled, deseeded, diced
fresh chives — chopped

Method:

1. Heat oil in a frying pan and sauté onion until soft. Add the mushrooms and sauté, stirring for 3 minutes. Add the chicken, broccoli and seasoning and cook for 2 minutes.
2. Lightly beat the eggs and milk together and soak the bread slices. Reserve leftover liquid. Grease a 27 cm diameter baking dish and line with the soaked bread to form a shell.
3. Sprinkle the cheese evenly over the bread. Spoon the broccoli mushroom mixture and the tomatoes over the bread. Pour the remaining egg custard over the broccoli and bake in preheated 190 ºC oven for 35 minutes or until set and bread has taken on a golden colour. Cover with foil if broccoli starts to brown too much.
4. Garnish with chopped chives and serve warm.
Serves 6-8.
