    Cheddar cheese, grated

    prawns, drained

    tuna, drained and flaked

    extra large hard-boiled eggs, sliced

    fresh parsley, finely chopped

    dry mustard powder
  • salt and freshly ground black pepper
 

Method

40 minutes
 
Preheat the oven to 180 ºC (360 ºF). Spray a large ovenproof dish, about 30 x 21 cm, with nonstick spray or grease well with butter or margarine. Heat the butter in a pan until melted and fry the green pepper and onion until soft and translucent. Stir in the tomato and simmer slightly. Whisk the eggs, milk and cake flour together. Add the remaining ingredients and the tomato mixture and mix well. Turn the mixture into the prepared dish and bake for about 40 minutes or until the mixture has set. Serve with a mixed salad. Serves 6.
