Crunchy salad

  • a selection of lettuce leaves, washed and dried
  • medium carrot, peeled and sliced in narrow strips
  • 4
    slim celery sticks, chopped
  • 100
    g
    fresh button mushrooms, wiped with a damp cloth and sliced
  • 5
    cm
    piece English cucumber, halved and sliced
  • lemon juice
  • 1
    avocado (stone removed), peeled and sliced
  • 1
    red apple, cored and sliced
  • 3
    baby mealies
  • whole almonds
  • bean sprouts
  • chopped parsley
  • chunky cottage cheese
  • 1
    cherry tomato for decoration
 

Method

 
Arrange the lettuce leaves on a small plate. Arrange the carrot strips, chopped celery and sliced mushrooms and cucumbers on top. Squeeze a little lemon juice over the avocado and apple slices and add these to the salad. Sprinkle the remaining ingredients, except the chunky cottage cheese and cherry tomato, over the salad. Spoon a large dollop of cottage cheese on top of the salad and decorate with a cherry tomato. Makes 1 large portion.
