Ingredients (14)

lettuce
carrot — peeled, julienned
4.00 celery stalks — chopped
100.00 g button mushrooms — sliced
5.00 cm cucumber — halved, sliced
lemon juice
1.00 avocado — sliced
1.00 apples — red, cored and sliced
3.00 baby corn
almonds — whole
mixed bean sprouts
fresh parsley — chopped
cottage cheese — chunky
1.00 cherry tomatoes — to garnish

Method:

Arrange the lettuce leaves on a small plate. Arrange the carrot strips, chopped celery and sliced mushrooms and cucumbers on top. Squeeze a little lemon juice over the avocado and apple slices and add these to the salad. Sprinkle the remaining ingredients, except the chunky cottage cheese and cherry tomato, over the salad. Spoon a large dollop of cottage cheese on top of the salad and decorate with a cherry tomato.
Makes 1 large portion.
