Crumpets with corned beef sauce

    cake flour

    baking powder

    salt
  • 2
    eggs, separated
  • 250
    ml
    milk
  • 30
    ml
    water
  • 65
    ml
    margarine, melted
  • SAUCE
  • 300
    g
    corned beef, minced
  • 410
    g
    tomato and onion mix
  • 5
    ml
    sugar
  • 30
    ml
    freshly chopped parsley
  • salt and freshly ground black pepper to taste
 

Method

 
Sift dry ingredients together. Mix egg yolks, water, milk and margarine. Stir into dry ingredients. Beat egg whites until stiff and fold into flour and milk mixture. Drop spoonfuls of batter into a hot, greased frying pan. When bubbles rise to the surface, turn over and allow to cook on other side (about 2 minutes). Drain on kitchen paper. Heat ingredients for sauce together. Spoon over crumpets and serve.
