Crumpets with caramelized strawberries

Ingredients

  • Crumpets:
  • 1
    large egg
  • 1
    cup
    cake flour
  • 5
    tsp
    sugar
  • 2
    Tbs
    melted butter
  • Pinch of salt
  • 2
    tsp
    baking powder
  • 1/4
    cup
    milk
  • Strawberry sauce:
  • 1
    cup
    strawberries
  • 1/2
    cup
    sugar
  • 1/2
    tsp
    cinnamon
 

Method

Crumpets:
Mix all the dry ingredients together.
Combine the milk, egg and butter.
Whisk into the dry ingredients until well combined and you have thick batter consistency (add little extra milk if the mixture is too thick.
Drop spoonfuls of batter onto a hot non-stick pan and cook until golden brown.
Keep warm.

Strawberries:
Clean and chop strawberries.
Heat sugar with cinnamon until the sugar starts to melt.
Add the strawberries and swirl until coated in the caramel.
Spoon over the crumpets, drizzle with extra honey and a dollop of Greek yogurt.
