Crumpets with bacon, banana, cheese and syrup

    milk

    cake flour

    banana, thinly sliced
  • 80

    Cheddar cheese, thinly sliced
  • 150

    rashers bacon, crisply fried
  • maple syrup

Crumpets
Whisk the eggs lightly. Add 125ml of the milk and the oil and mix lightly. Sift together the cake flour, baking powder and salt and add to the egg mixture. Whisk just until the mixture is smooth with no lumps. Gradually add the remaining milk to make a smooth batter. Do not stir the batter again. Allow it to rest for 30 minutes. Cook the crumpets on a stove plate in greased ring pans or drop spoonfuls onto the base of a hot greased pan. The plate (or pan) needs to be greased only once. Turn the crumpets with an egg lifter as soon as they form air bubbles on top and are firm. Heat the crumpet until lightly browned on the other side.
Filling
Put banana slices and cheese on one crumpet and cover with another. Stack with bacon rashers and drizzle with maple syrup.
