Crumbed saddle of lamb

  • 2
    x 1 kg pieces brisket of lamb with chops (carved through bones, so you can slice them)
  • 10
    ml
    salt
  • freshly ground black pepper to taste
  • oil for roasting
  • CHEESE TOPPING
  • 500
    ml
    grated cheddar cheese
  • 60
    ml
    chopped spring onion
  • 60
    ml
    chopped parsley
  • 30
    ml
    grated lemon rind
 

Method

 
Preheat oven to 175 °C.
Rub meat pieces with seasoning and arrange so that the ribs keep the saddle together.
Brush saddle with oil and roast for about two hours.
Meanwhile mix ingredients for cheese topping and spread over the meat 20 minutes before the end of cooking time.
Return meat to oven until done.
Serve with pan-grilled parsnips and carrots.
