Ingredients (11)

2.00 kg chicken — pieces
4.00 garlic — cloves, crushed
15.00 ml sea salt
45.00 ml fresh chillies — 573
freshly ground black pepper
30.00 ml fresh parsley — chopped
250.00 ml breadcrumbs — fresh
80.00 ml parmesan cheese — finely grated
25.00 ml butter — melted
15.00 ml fresh chillies — 573
2.00 eggs — beaten

Method:

Arrange the chicken pieces in a single layer in a dish. Crush the salt and garlic into a paste. Add the oil and season with black pepper. Smear over the chicken, cover with cling wrap and allow to stand for a few hours. Mix parsley, crumbs and cheese together. Preheat the oven to 180ºC and pour butter and oil into an oven dish. Heat the baking dish in the oven. Dip the chicken in the beaten egg and dip in the crumb mixture. Put the chicken into the heated butter/oil mixture and bake for about 45 minutes until golden brown. Pour over some of the pan juices while baking. Serve with steamed vegetables and baked potatoes.
