Crumbed fish

Ingredients (8)

3 potatoes — peeled, chopped
600 g hake fillets
sea salt and freshly ground black pepper
1 ml mixed herbs
4 — crushed biscuits
2 eggs — extra-large, whisked
1 onion — finely chopped
pinch salt

Method:

Preheat the oven to 180°C. Spray an oven pan with non-stick spray.

Boil the potato chunks in a little salted water until tender. Drain.

Season the hake with the salt and a bit of pepper and a pinch of herbs. Roll the fish fillets in the crumbs.

Roll in the whisked egg and then in the crumbs again.

Arrange in the prepared oven dish and sprinkle the onion on top.

Surround with the potato chunks and bake for 20-30 minutes or until the fish is done and flakes easily with a fork and the potatoes are golden.

Serve with lemon wedges and a tartare sauce if desired.
