Croque monsieur

    2 T flour
  • 0
    4 T butter
  • 0
    500ml milk
  • 0
    1 block of mature gruyere cheese, grated
  • 0
    1 t nutmeg, fresh if you can get it
  • 0
    Salt and white pepper
  • 0
    1 French loaf
  • 0
    4 slices thick good ham
  • 0
    1 T lemon juice

Place the butter in a saucepan and let it melt.
Add the flour and stir well to cook it (a few minutes). Do not let it brown.
Take the pan off the heat and cool for a minute, then add the milk slowly whilst whisking, this will prevent lumps from forming.
Place it back on the heat and grate in the fresh nutmeg.
Add the cheese and stir slowly until you have a smooth sauce.
Add the lemon juice.
Season with salt and white pepper.
Toast the bread under the grill until golden brown.
Place the ham on top and pour over the hot cheesy sauce.
Enjoy immediately.
