Crispy potato parcel

    batter: flour

    baking powder

    salt
  • 5
    ml
    black pepper
  • 1
    beaten egg
  • 250
    ml
    milk
  • 5
    ml
    oil
  • 5
    filling: baby potatoes, boiled, peeled and halved
  • 180
    g
    mozzarella cheese cut into 5 mm-thick
  • 5
    slices the same size as the halved potatoes
  • 10
    rashers cooked bacon
  • 50
    ml
    oil for deep-frying
 

Method

Batter: Sift the dry ingredients into a mixing bowl.
Beat the egg, milk and oil into the dry ingredients to form a slack batter.
Allow to stand for an hour.

Filling: Place a slice of cheese on each potato half and wrap with a rasher of bacon.
Secure with cocktail sticks.
Heat enough oil for deep-frying, dip the parcels in the batter and fry until browned and crispy.
Drain, remove the sticks and serve hot with sweet chilli sauce or avocado dip.
