Crispy chiliguiles

    cloves garlic, crushed

    fresh green chilli, sliced

    small onion, finely chopped

    olive oil

    chopped tomatoes

    sugar

  • freshly ground black pepper

    fresh coriander

    chicken or turkey stock
  • 15
    ml
    tomato concentrate
  • 400

    shredded turkey (any leftover meat is suitable)
  • 100

    tortilla chips
  • 150
    ml
    sour cream
  • 25

    mild Cheddar cheese, grated
 

Method

 
Microwave the garlic, chilli, onion and olive oil for 1 1/2 minutes on HIGH, to soften the onion. Add chopped tomatoes, sugar, seasoning and stock to onion mixture, combine well and microwave on HIGH for 1 minute. Stir in tomato concentrate and shredded meat. Cook on HIGH for a further 5 to 6 minutes. Drain off excess liquid and adjust seasoning. Spread tortilla chips on an ovenproof dish. Top with the meat sauce. Spoon over the cream, sprinkle with cheese and place under the grill for 3 to 4 minutes until golden and bubbling. Serve with Creamy avocado sauce (see recipe).
