Crispy chicken drumsticks

    chicken drumsticks
  • 4
    garlic cloves, chopped
  • 5
    ml
    ground coriander
  • 10
    ml
    turmeric
  • 5
    ml
    freshly ground black pepper
  • 5
    ml
    salt
  • 40
    ml
    sweet chilli sauce
  • 20
    ml
    extra chilli sauce to serve (optional)
 

Method

30 mins
 
Boil the drumsticks in salted water for 15 minutes.
Transfer them to an oven pan and leave to cool completely. Pound the garlic, coriander, turmeric, pepper, salt and chilli sauce in a mortar until the mixture is smooth (or blitz in a food processor).
Spread the mixture over the cooled chicken, cover and chill for at least 30 minutes.
Preheat the oven to 220°C. Roast the drumsticks until dark brown. Turn regularly.
Serve with potatoes and extra sweet chilli sauce.
