Crisp whitebait with wasabi mayonnaise

    large eggs, separated
  • 60
    ml
    flour
  • 60
    ml
    milk
  • salt and milled black pepper
  • sunflower oil for deep frying
  • 500
    g
    whitebait, well-dried
  • halved lemons to serve
  • MAYONNAISE
  • 250
    ml
    mayonnaise
  • 30
    ml
    wasabi paste
 

Method

 
MAYONNAISE: Mix mayonnaise and wasabi paste and refrigerate until required. Beat egg yolks until light and fluffy, add 15 ml (1 tbsp) each flour and milk and mix well. Continue adding flour and milk in batches until mixture makes a smooth batter. Season. Whisk egg whites to stiff peaks and fold into batter. Heat oil in a large frying pan. Add whitebait to batter and stir lightly to coat. Fry whitebait for 2 minutes, then drain on absorbent paper. Spoon mayonnaise onto halved lemons, top with whitebait and serve.
