Crisp coriander chicken with fruity couscous

    fresh coriander
  • 60
    ml
    butter
  • 2
    kg
    chicken
  • 500
    ml
    couscous
  • orange juice
  • 8
    dates, stones removed and thinly sliced
  • 250
    ml
    sultanas
  • 1
    red onion, peeled and chopped
 

Method

 
Preheat oven to 160 ºC. Stuff coriander and 30 ml (2 tbsp) butter under chicken skin. Bake for 40 - 50 minutes. While chicken is cooking, prepare couscous as instructed, but using orange juice instead of water. Fry dates, sultanas and red onion in remaining butter. Mix into orange couscous. Cut chicken into pieces and arrange on a bed of fruity couscous to serve. Serves 4.
