Crisp coriander chicken with fruity couscous

Ingredients (8)

125.00 ml fresh coriander
60.00 ml butter
2.00 kg chicken
500.00 ml couscous
orange juice
8.00 dates — pitted, sliced
250.00 ml sultanas
1.00 red onion — peeled and chopped

Method:

Preheat oven to 160 ºC. Stuff coriander and 30 ml (2 tbsp) butter under chicken skin. Bake for 40 – 50 minutes. While chicken is cooking, prepare couscous as instructed, but using orange juice instead of water. Fry dates, sultanas and red onion in remaining butter. Mix into orange couscous. Cut chicken into pieces and arrange on a bed of fruity couscous to serve.
