Crisp calamari

  • 300
    g
    frozen calamari rings
  • 5
    ml
    paprika
  • 2
    ml
    cayenne pepper
  • 2
    ml
    salt
  • 1
    ml
    freshly ground black pepper
  • 200
    ml
    cake flour
  • 2
    extra-large eggs, beaten
  • oil for deep-frying
  • lemon wedges and fresh parsley for serving
 

Method

 
Defrost calamari in cold water and dry well with paper towelling.
Blend the paprika, cayenne pepper, salt, black pepper and flour in a bowl.
Add the calamari and mix until each ring is lightly coated.
Remove rings with a fork, dip in the beaten egg and return to the flour mixture, ensuring each ring is coated.
Heat enough olive oil in a pan and fry each ring for about 30 seconds or until lightly browned.
Remove from oil, drain on paper towelling and sprinkle with fresh lemon juice and parsley.
Serve immediately.
