  • SALAD
  • 750

    cooked rice
  • 410

    pineapple chunks, drained
  • 1
    red apple, cored and diced
  • 175

    bacon, fried and finely chopped
  • 50

    cashew nuts, roasted
  • 6
    chives, chopped
  • 65
    ml
    coconut (optional)
  • SALAD DRESSING
  • 45
    ml
    mayonnaise
  • 45
    ml
    plain yoghurt
  • few drops tabasco sauce
  • 15
    ml
    lemon juice
 

Method

 
Mix all the salad ingredients. Add the coconut if desired. Blend all the dressing ingredients and pour over the salad. Mix lightly until all the salad ingredients are well coated with the dressing. Chill until just before serving.
