    ml
    cream
  • 4
    jumbo egg yolks
  • 50
    g
    sugar
  • 5
    ml
    vanilla essence
  • 125
    g
    brown sugar
  • mineola segments

Bring cream to boiling point in a saucepan. Beat eggs with sugar. Stir a little cream into eggs and then pour back into saucepan. Cook over a low heat, stirring continuously, until mixture thickens and coats the back of a spoon. Do not allow to boil. Add vanilla essence and pour into 4 ramekins. Cover and refrigerate overnight. Just before serving, sprinkle the brown sugar evenly and entirely over the custards and place under a preheated grill to caramelise the sugar. Serve with mineola segments. Serves 4.
