Creamy vegetable curry

    sesame oil

    curry powder
  • 5

    ground coriander
  • 5

    whole cumin seeds

    medium onions
  • 2
    cloves garlic
  • 3
    large potatoes
  • 125
    ml
    vegetable stock
  • 125
    ml
    coconut milk
  • 125
    g
    fresh mushrooms
  • 200
    g
    broccoli
  • 410
    g
    baked beans
  • poppadums or rotis, to serve
 

Method

20 minutes
 
Heat oils in a large saucepan. Add curry powder, coriander and cumin seeds and stir for 1 minute.
Add the onion, garlic and potatoes and sauté for 5 minutes. Add the stock and coconut milk and bring to the boil. Simmer for 10 minutes or until potatoes have softened.
Add the mushrooms, broccoli and baked beans and simmer for a further 5 to 10 minutes until the broccoli is tender.
Serve with poppadums or rotis.
