Creamy sun-dried tomato fusilli

    oil-packed sun-dried tomatoes, drained
  • 1
    bunch spring onions, chopped
  • 250
    g
    cream cheese
  • 250
    ml
    cream
  • milled black pepper
  • 500
    g
    fusilli, cooked according to packet instructions
  • grated Parmesan cheese
  • fresh basil
 

Method

 
Heat oil from tomatoes in a saucepan. Add spring onions and sauté for 1 minute. Add cream cheese and heat slowly. When cheese is runny, add cream and sun-dried tomatoes. Bring to boil, then reduce heat and simmer for 5 minutes. Season to taste with pepper and pour over hot fusilli. Serve immediately with freshly grated Parmesan cheese and basil.
