Creamy spaghetti with smoked ham

    butter

    wafer-thin smoked ham
  • 300
    ml
    single cream
  • 3
    egg yolks
  • salt and freshly ground black pepper
  • 45
    ml
    Parmesan, grated
  • 30
    ml
    fresh, chopped parsley
  • 450
    g
    fresh spaghetti
 

Method

 
1. In a medium-sized frying pan, soften garlic in the butter. Cut ham into thin strips and add to the garlic butter. Put to one side. 2. Whisk together the cream, egg yolks, seasoning, Parmesan cheese and parsley. 3. Cook the spaghetti in boiling water; drain and return to the pot. Toss in the ham and cream mixture and cook over a low heat, tossing and stirring all the time until the cream begins to coat the pasta. Serve immediately with a refreshing mixed leaf salad in a vinaigrette dressing.
