Creamy prawn soup

    butter

    carrot
  • 1
    onion
  • 2
    thyme sprigs
  • 500
    g
    fresh prawns
  • 30
    ml
    tomato purTe
  • 150
    ml
    dry white wine
  • 1
    Litres
    fish stock
  • 60
    ml
    cream
  • Garnish
  • 15
    ml
    olive oil
  • 2
    garlic cloves
  • 30
    ml
    Italian parsley
 

Method

 
Heat the butter in a large saucepan. Add vegetables and thyme. Cook for 2 minutes.
Add 3/4 of the prawns, tomato purée, wine and stock.
Simmer for 15 minutes. Blend in a food processor until smooth and creamy.
Add the cream.
Heat the oil in a frying pan.
Stir-fry the remaining prawns, garlic and parsley.
Spoon soup into bowls and top with prawns.
