A cheesey and creamy potato bake that makes a great accompaniment.

Ingredients (5)

8 potatoes — large, peeled and chopped
250 g bacon — chopped
8 mushrooms — chopped
1 cup cream — fresh
1 1/2 cup cheese — grated

Method:

Preheat oven to 180.
Par boil potatoes in microwave for 10 min on high. 
Drain potatoes and transfer to ovenproof dish.
Cook bacon in microwave for 3 min till just cooked.
Add bacon, mushrooms, cream, 1 cup cheese, salt and pepper. 
Mix all the ingredients through and bake for 50 min stirring occasionally.
Once potatoes are soft, add the remaining cheese for topping and melt.
