Creamy potato bake

potato bake

Ingredients

  • 8
    large potatoes, peeled and chopped
  • 250
    g
    bacon, chopped
  • 8
    mushrooms, chopped
  • 1
    cup
    fresh cream
  • 1 1/2
    cup
    grated cheese
 

Method

40 mins
 
Preheat oven to 180.
Par boil potatoes in microwave for 10 min on high. 
Drain potatoes and transfer to ovenproof dish.
Cook bacon in microwave for 3 min till just cooked.
Add bacon, mushrooms, cream, 1 cup cheese, salt and pepper. 
Mix all the ingredients through and bake for 50 min stirring occasionally.
Once potatoes are soft, add the remaining cheese for topping and melt.
