Creamy pork and apple stew

    oil

    large onion, chopped
  • 1
    clove garlic, crushed
  • 10

    soft brown sugar
  • 2
    green apples, cut into wedges
  • 4
    pork loin medallions
  • 30
    ml
    brandy
  • 30
    ml
    Dijon mustard
  • 250
    ml
    chicken stock
  • 125
    ml
    fresh button mushrooms
  • 180
    ml
    cream
 

Method

 
1. Heat the oil and sauté onion and garlic until transparent. Add sugar and apple, stirring regularly until apple begins to brown. Remove from pan. 2. Add pork steaks and brown on both sides. Add brandy and stir until nearly evaporated. Add mustard and stock, cover and simmer gently for 10 minutes. 3. Add apple mixture, mushrooms and cream and simmer for 15 minutes, or until pork is tender. Season to taste. 4. Serve warm with rice.
