    kg
    pork, cut into strips
  • 25
    ml
    oil
  • 2
    medium-sized onions, chopped
  • 1
    clove garlic, crushed
  • 1
    bay leaf
  • salt and freshly ground black pepper
  • 5
    ml
    fresh ginger, grated
  • 5
    ml
    coriander
  • 2
    ml
    paprika
  • 30
    ml
    lemon juice
  • 250
    ml
    meat stock
  • 30
    ml
    cornflour, prepared with a little cold water
  • 200
    ml
    plain yoghurt
  • salt and freshly ground black pepper
 

Method

+/- 20 min
 
Heat the oil in a saucepan or large pan and stir-fry the pork strips until just brown. Add the onions and garlic and stir-fry until tender. Add the seasonings, lemon juice and meat stock and simmer for about 15-20 minutes until flavoursome. Remove the bay leaf. Thicken the gravy with the cornflour paste and bring to the boil. Add the yoghurt and heat through. Check seasonings and serve with pasta. Serves 4-6.
