Creamy pasta salad

  • 500
    g
    shell pasta shapes
  • 30
    ml
    olive oil
  • 6
    stalks celery, coarsely chopped
  • 2
    bunches chives, chopped
  • 2
    cucumbers, peeled, seeded and chopped
  • fresh parsley
  • 30
    ml
    wholegrain mustard
  • 10
    ml
    honey
  • 500
    ml
    low-oil mayonnaise
  • 10
    ml
    lemon juice
  • salt and-freshly ground black pepper
  • Parmesan cheese shavings
 

Method

 
Cook the pasta in plenty of rapidly boiling salted water until firm but tender. Drain and drizzle with the olive oil. Mix lightly and leave to cool. Add the celery, chives and cucumber. Blend the parsley, mustard, honey, mayonnaise, lemon juice, and salt and freshly ground black together and pour over the pasta. Mix lightly and scatter with Parmesan cheese shavings. Serves 8-10.
