Creamy orange custard

  • 2
    egg yolks, beaten
  • 100
    g
    sugar
  • 1
    ml
    salt
  • 25
    ml
    cornflour
  • 30
    ml
    cake flour
  • 5
    ml
    lemon rind, grated
  • 250
    ml
    cream
  • 250
    ml
    orange juice
 

Method

 
Blend together the egg yolk, sugar, salt, cornflour and cake flour. Add the remaining ingredients and mix well. Pour into a heavy-based saucepan and bring to the boil, stirring continuously. Boil thoroughly and pour into a bowl to cool. Serve with meringue nests. Makes 500 ml custard.
