Ingredients (8)

2.00 eggs — yolks only, beaten
100.00 g sugar
1.00 ml salt
25.00 ml cornflour
30.00 ml flour — cake
5.00 ml lemon — zest only
250.00 ml cream
250.00 ml orange juice

Method:

Blend together the egg yolk, sugar, salt, cornflour and cake flour. Add the remaining ingredients and mix well. Pour into a heavy-based saucepan and bring to the boil, stirring continuously. Boil thoroughly and pour into a bowl to cool. Serve with meringue nests.
Makes 500 ml custard.
