Ingredients (4)

190.00 ml butter — unsalted
315.00 ml brown sugar — soft
190.00 ml golden syrup
190.00 ml condensed milk

Method:

Place all the ingredients in a pan and cook over low heat until the sugar dissolves.
Increase the heat, stirring all the time, until it reaches the crack stage.
Remove from the heat and pour into an oiled 15 cm loaf tin.
Allow to cool until just firm and cut into squares, or leave to set until hard and then hit with a rolling pin to get rough pieces.

Cook’s note:
The crack stage is when a teaspoon of toffee dropped into a bowl of cold water forms a hard ball.
