Creamy mussels

    tsmoked mussels in oil, drained (reserve the oil)
  • 1
    large onion, finely chopped
  • 2
    cloves garlic, crushed
  • 1
    small green pepper, seeded and finely chopped
  • 250
    g
    fresh button mushrooms, sliced
  • 10
    ml
    fresh parsley, finely chopped
  • pinch peri-peri powder to taste
  • 30
    ml
    cake flour
  • 375
    ml
    milk
  • 250
    ml
    Cheddar cheese, grated
  • 250
    ml
    cream
  • salt and freshly ground black pepper
 

Method

 
Heat the mussel oil in a large pan and fry the onion, garlic and green pepper until tender and translucent. Add the button mushrooms and stir-fry until brown. Add the parsley and peri peri and mix. Blend the cake flour and milk to form a paste. Add to the mixture and simmer while stirring continuously until the mixture comes to the boil and thickens. Add the mussels, cheese and cream and simmer for 5 minutes. Season with salt and black pepper to taste. Serve with rice or pasta. Serves 4-6.
