Creamy mussel sauce

    sunflower oil
  • 2
    leeks, finely sliced
  • 2
    large egg yolks
  • 250
    ml
    cream
  • 20
    ml
    snipped chives
  • 15
    ml
    lemon juice
  • 10
    ml
    lemon rind, grated
  • 105

    smoked mussels, drained
  • tagliatelle pasta, cooked and drained
 

Method

8 minutes
 
1. Heat oil in a saucepan and fry leeks for one minute. 2. Whisk together egg yolks and cream and add to the pan. Stir over gentle heat for five minutes or until thickened. Stir in chives, lemon juice and lemon rind and season to taste. Stir in mussels. Serve with cooked and drained tagliatelle pasta.
